Chicken Molletes
- 1 pound Oven Roasted Chicken Breast
- 4 bolillo rolls
- 8 tablespoons of chipotle mayo
- 1-15 ounce can of refried black beans
- 1 cup pico de gallo
- 1 cup shredded Chihuahua cheese
- ½ cup guacamole (served on the side)
- Slice rolls in half
- Spread 1 tablespoon of chipotle mayo on each roll and top with evenly distributed refried black beans
- Top with 4 ounces Oven Roasted Chicken Breast, shredded Chihuahua cheese and pico de gallo
- Place on top half of the bolillo roll
- Use a side cup for guacamole or spread over the top of the sandwich
