Horseradish Roast Beef Roll-up

Trim the tough, fibrous ends of the asparagus stalks with a paring knife or vegetable peeler. Blanch asparagus in a salted pot of boiling water and cool stalks in ice water. Once cooled, remove and pat dry.

Roll each stalk of asparagus with a piece of roast beef and season with pepper if desired.

Serve with Castle Wood Reserve Horseradish Horseradish Sauce.
